The airport's Pop-Up Program, launched in 2024, is bringing in some unique and mouth-watering experiences for travelers. Say goodbye to Orox Leather Co. and Missionary Chocolates, as they make way for Mikiko Mochi Donuts and Ecovibe. Yes, you read that right - donuts and houseplants are taking over!
Mikiko Mochi Donuts, a local chain created by Alex McGillivray and Emily Mikiko Strocher, is all about those chewy butter mochi doughnuts. A twist on the traditional, these treats are naturally gluten-free, made with rice flour and coconut milk. It's a delightful option for those with dietary restrictions, as McGillivray puts it, "Everybody deserves good options."
And this is the part most people miss - Ecovibe, a family-owned business, is not your typical airport shop. They're bringing a carefully curated selection of indoor plants, eco-friendly home decor, and even clothing and jewelry. Owned by Leanord and Andrea Allen, Ecovibe aims to "uplift other local makers" and offer a little piece of Portland to travelers.
