Example, if you look at the following two sample pages, taken from real wedding albums. On one of them, one single image takes up the whole of two pages (a spread). That’s great, it’s a fabulous image and it should be shown as big as possible in the album. But if you were to do that with every image, then in a 20 spread album, you’d only fit 20 images.
