Fruit co*cktail eggnog pie

Prep Time: 10 minutes

Cook Time: 15 minutes

Additional Time: 4 hours

Total Time: 4 hours 25 minutes

Ingredients

  • 3-1/2 cups of fruit co*cktail
  • 2 1/2 teaspoons Knox gelatin
  • 1-1/2 cups prepared eggnog
  • 1/8 teaspoon salt
  • 1-1/2 teaspoon vanilla
  • 1/4 teaspoon almond flavoring
  • 1 cup whipping cream
  • 1 9-inch baked pie shell

Instructions

  1. Drain fruit co*cktail well, and measure 1/2 cup of the syrup.
  2. Stir gelatin into syrup, place over boiling water and stir until gelatin is dissolved.
  3. Remove from heat, stir into eggnog.
  4. Add salt, flavorings.
  5. Chill until mixture mounds when dropped from spoon.
  6. Whip cream.
  7. Fold into gelatin mixture along with 1-1/2 cups well-drained fruit co*cktail.
  8. Chill again 5 to 10 minutes, until mixture mounds.
  9. Heap into baked and cooled pie shell.
  10. Chill for 2 to 4 hours.
  11. Decorate with remaining fruit co*cktail before serving.
