Crock Pot Chicken Recipes- Lemon Garlic Chicken - Gwen's Nest (1)Lemon Garlic Chicken is my latest crock pot chicken recipes discovery- and it’s amazingly flavorful and SO simple! We enjoyed this with roasted veggies, but you could just as easily pair it with fried rice for an Asian spin. I just love it when a recipe is *that* versatile, because it’s always great when leftovers can be a little fun and adventurous.

Now, I’m a BIG fan of crock pot meals, especially as my crew adjusts to busier back to school schedules, but this recipe goes *beyond* crock pot easy. Seriously, these crock pot chicken recipes are rocking my world right now. What if I told you that I put together three *different* meals in about 20 minutes this weekend!?!!

This Lemon Garlic Chicken is a recipe featured in Sharla Kostelyk’s cookbook called Chicken Dump Recipes. Not only are these recipessuper easy peasy (mostly) crock pot recipes, but they’re “Dump” recipes

I didn’t even know such a thing existed until last week when I stumbled upon the Chicken Dump Cookbook in the Healthy Living Bundle. Y’all. I’m in food and remedies heaven with all of this stuff! I’m a total bundle convert.

But back to the food: here’s another one of Sharla’s dishes- Sticky Chicken. Served with roasted veggies and a Caesar salad.

I love to share life changing stuff, like my homemade Ranch dressing and Greek seasoning recipes, butSharla’s “dump it all in a bag” method of putting meals together has just blown my mind.

I popped two into the fridge to marinate and the third is in the freezer right now waiting for the weekend.

This is how a dump recipe works:

  1. Gather all ingredients and recipes, and label your freezer bags.
  2. Fold tops of bags down so they’ll stand open, and fill ’em up.
  3. Press out air from the bags.
  4. Freeze until ready to cook.

First, I’ll give you a fewtips on this method, and then I’ll hand over the recipe:

Tip 1: If you’re using chicken breasts, use the lowest time setting option given. If you cook your chicken breasts in the oven for an hour, they might be more dry than sticky. Just so ya’ know.Crock Pot Chicken Recipes- Lemon Garlic Chicken - Gwen's Nest (7)

Tip 2: Sharla doesn’t mention this, but you can also used diced chicken chunks in the recipe, and finish them quickly on the stovetop. Just dump everything into a medium saucepan and cook down for about 20 minutes until cooked through.

Tip 3: Plan on letting frozen meals thaw the day before in the fridge- the cooking time is more reliable and you’ll get a nice deep marinade. Win-win.Crock Pot Chicken Recipes- Lemon Garlic Chicken - Gwen's Nest (8)

One of the easiest and tastiest crock pot chicken recipes in the history of ever! Serve with veggies, or mix it up with Asian style sides- this stuff is addictive. This recipe is inspired from the Lemon Garlic Chicken recipe from the Chicken Dump Cookbook by Sharla Kostelyk. The idea is to quickly assemble several meals to use, freeze, or gift. The ingredients below will make one large family meal using a 2.5-3 pound bag of chicken. You can easily divide this into smaller bags for smaller families, singles, or couples.

Serves: 6-8 servings

Ingredients

  • 6-8 chicken breasts or 8-10 boneless, skinless chicken thighs
  • 4-6 cloves of garlic, minced
  • 2 tablespoons chopped fresh parsley
  • ⅓ cup olive oil
  • 1½ lemons, juiced
  • ½ teaspoon pepper

Instructions

  1. Label your gallon zippy bag with the recipe name and cooking instructions.
  2. Fold down top of bag so that it will stand upright while you fill it.
  3. Add all ingredients to bag.
  4. Press out air and seal.
  5. Refrigerate for up to 2 days, or freeze flat.
    Cooking Instructions
  6. Thaw bag in the fridge. I like to place it in a casserole dish to prevent leaking.
  7. Dump bag into crock pot, and cook on low for 4-6 hours.
  8. OR bake in a casserole dish at *350 for 35-45 minutes, or until chicken is thoroughly cooked through.

Notes

Trim Healthy Mama Notes:
